Meatless Dish- Labouyi Bannan (Plantain Porridge)



Start your morning off right with a bowl of porridge. A sweet and fortifying Caribbean staple that is sure to keep you full and energized. There are several different ways to make it. Some use oats, wheat, flour, and corn to make porridge. Since I'm of Haitian descent, I'm going to share how to make a sweet and creamy version using plantains. I shared the benefits of plantains here

INGREDIENTS:
-Plantains
-Cinnamon Stick
-Star Anise
-Sweetened Milk (half a can)
-Coconut Milk (half a can)
-Butter
-Lime Zest
-Vanilla Extract



On medium heat add a cup of water to pot; add cinnamon stick and star anise to the pot; while you have that going; clean and wash the plantains, then chop up in pieces with the skin on (some people peel off the skin, it's all about preference I left the skin on); add a cup of water and plantains to blender; blend until smooth; add puree to the pot; add lime zest, butter, coconut milk; stir until it begins to boil; add vanilla extract and sweetened milk; keep stirring until you get desired consistency. For best results use a whisk while stirring to avoid any clumps.
