I found this recipe while flipping through one of my cookbooks. I've sampled gazpacho before (think it was tomato) but I didn't like it. …And I happen to like my soups hot. So, when I saw avocado which is a favorite of mines I decided to try this recipe. Is it a keeper? Find out below.
INGREDIENTS:
-2 Avocados
-1 lime (grated zest and juice of lime)
-Tomatoes
-Vegetable Broth
-1 Cucumber
-Crushed Red Peppers
-1 Garlic Clove
-Seasoned Salt and PepperPeel and chop avocado, lime zest, lime juice, and broth in a blender; blend until smooth; pour in a bowl and set aside; put tomatoes, cucumber, red peppers, garlic, and seasonings in blender; blend to a puree; add the tomato mixture to the avocado mixture; be sure to mix well and put in the refrigerator for about an hour; garnish with tomatoes and cucumbers.
I was impressed with this recipe. It turned out better than I expected and it makes me look forward to making more vegan recipes. I definitely will be making this again.
