Wait a minute before you exit out of here. I know what you're thinking... Carrot Hot Dog??? This is outta control. I said the same thing when I saw this recipe floating around. When I kept seeing it pop up, it was a sign telling me to give it a try. Did I like it? Keep scrolling to find out.
INGREDIENTS:
-Carrots
-Hot Dog Buns
*For Marinade*
-Red Wine Vinegar
-Garlic (minced)
-Liquid Smoke
-Seasoned Salt & Pepper
Cut the ends of the carrots and peel; boil carrots until they are fork tender don't overcook them; once they are done drain and run under cool water to stop the cooking process; while the carrots are cooking start preparing the marinade; whisk together vinegar, garlic, liquid smoke, and seasonings; add the carrots and marinade to a zip style bag; refrigerate for about 24 hours; the next day brown them with olive oil and some of the marinade; serve with your choice of toppings.
I had mines two ways-
Vegetarian: with mayo, scallions, onions, tomatoes, and mustard
Vegan: I simply added Pikliz
My favorite was the vegetarian version. It's been a while since I've had a hot dog (not feeling the mystery meat) and I was shocked at how this meatless version tasted exactly like I had just eaten the real thing. I was like.....
How can this be???
This recipe gets two thumbs up from me. I will definitely be making this again and using the liquid smoke for other dishes. Don't knock it till you tried it.
