I've been making and eating a lot of salads lately. Some I've had with fruits and it wasn't a bad experience. I'm that person that doesn't really like fruits in her salad but my favorite so far is this one. Anyways, I just wanted to switch things up a bit by adding salmon.
INGREDIENTS:
-Salmon (preferably skinless and wild caught)
-Ginger
-Lime Juice
-Tomatoes
-Leaf Lettuce
-Arugula
-Blue Cheese

I marinated the salmon with ginger, lime juice, and seasonings for a few hours. While it was marinating I made the dressing and put in the fridge until I was ready to use it.
Grill salmon and let it cool down; start the layering process by adding lettuce mix to a plate then the tomatoes, blue cheese, and salmon. Drizzle with dressing and enjoy.
