Meatless Dish- Watermelon & Arugula Salad


I was never really a fan of fruits in my salads. I think it was an oriental salad I once tried that made me stay away. After making this salad and really liking it, I decided to *singing* give it one more chance. I'll be making and adding more fruits to my salads and sharing whether I like it or not. Here's a super easy to make salad that I really, really, like and hope you will too. 

INGREDIENTS:
-Watermelons
-Arugula
-Blue Cheese
-Olive Oil
-Red Wine Vinegar
-Salt & Pepper

Whisk olive oil, vinegar, salt, and pepper in a bowl and set aside; add arugula, watermelon, and cheese on a plate; drizzle dressing on top and enjoy.

There are several recipes that calls for feta cheese and other types of vinegar but you can make it your own. This salad was very light, satisfying, and so pretty to look at.
