INGREDIENTS:
-Mussels
-Plantains (boiled)
-Red Wine Vinegar
-Olive Oil
-Tomato Paste
-Garlic
-Tomatoes
-Green Peppers
-Onions
-Seasoned Salt
-Black Pepper
I marinated the mussels (optional) overnight with lime juice and seasonings.
Boil the plantains; once they're almost done heat olive oil on medium heat; add red wine vinegar, garlic, tomatoes, peppers, and onions; cook until soft; add tomato paste and mussels; let cook for 3-4 minutes garnish with green onions and enjoy with plantains.
