Meatless Dish- Mushrooms & Arugula Salad



I tried a new salad that was super easy to make. It's not my favorite (I'm on a journey of trying new things), but I really enjoyed the dressing. There was a time only Ranch would do. However, I've been slowly trying new ones. But one dressing I will never ever try again is Thousand Island.

INGREDIENTS:
-Mushrooms (chopped)
-Arugula
-Onions (optional)

Dressing:
-Red Wine Vinegar
-Garlic (diced)
-Salt
-Pepper
-Lemon Juice

Add arugula, mushrooms, and onions to your plate; in a mixing bowl whisk together ingredients for dressing; pour dressing over salad and enjoy.

  1. Hi there! I love arugula and I usually eat it with this salad dressing:
    -a spoonful of peanut butter or tahini or any nut butter
    -a tablespoon olive oil
    -a pinch of salt
    -a teaspoon sugar, honey or maple syrup
    -some hot sauce (I use sriracha sauce)

    I know it sounds weird but it's creamy and hot and sweet at the same time and goes with that bitter/spicy taste of arugula. I think so anyways, LOL.
