Meatless Dish- One Pot Mexican Quinoa

I found this recipe while scrolling through my timeline via Twitter. You can check it out here

-Seasoned Salt and Black Pepper
-Corn (you can use the liquid from the can and water combo instead of veggie broth)
-Black Beans (drain)
-Mixed Cheese (optional for a more vegan dish)
-Hass Avocado (optional)

Heat olive oil on medium heat; add garlic and onions cook until browned; add jalapeño, tomatoes, and seasonings; add corn, black beans, and quinoa. Stir and cook until quinoa appears soft. Top with cheese and healthy fat avocado.

This was very satisfying and filling. It makes a great Meatless Monday option. Yay!!! Another winner going in my "clueless" cookbook.
