INGREDIENTS
-Mushrooms
-Potatoes
-Onions
-Vegetable Broth
-Vegetable Bouillon
-Olive Oil
-Seasoned Salt and Pepper
-Green Onions (optional)
-Juice of 1 lime
-Whipping Cream
Heat olive oil in large pot; add the mushrooms and onions until softened; add potatoes, vegetable broth, bouillon, and let simmer until potatoes are soft; add seasonings along the way; allow to cool
Puree soup in blender and return to pot; Stir in whipping cream and lime juice; garnish with green onions (optional)
This soup was so so good and I will continue to make it. It lasted for a few days, and I later used some leftovers to make a cheese sauce for rigatoni mac' and cheese. Yummers!
