Meatless Dish- Spicy Carrot Soup

-Garlic (chopped)
-Seasoned Salt
-Black Pepper
-Chili Flakes
-Vegetable Bouillon
-Vegetable Broth
-Olive Oil 
-Scallions (optional garnish)

Heat olive oil on medium heat in stock pan; add celery, garlic, and tomatoes cook until softened; add seasonings along the way; add veggie broth and carrots; let it simmer stirring occasionally for about 20-30 minutes; puree the soup (batches) in a blender until smooth; return to pan cook for 10-15 minutes garnish with scallions. The level of spiciness is up to you. Enjoy!
