Oh how I love being on twitter! I've been able to connect with some pretty awesome people who share their talents and passion. One such individual is Renz. She's a professional eater who like me will try anything just once. When I saw her tweet for this recipe… umm… yeah... you already know.
INGREDIENTS:
-Chickpeas
-Tomatoes (chopped)
-Onions
-Garlic (diced)
-Olive Oil
-Avocados
-Taco Seasonings
-Seasoned Salt
-Black Pepper
-Taco Shells
I bought dry chickpeas and soaked in water overnight (a can of chickpeas will work too, I just happened to have the dry ones); Cook peas according to directions on package and drain; Heat oil on medium heat add garlic, onions, and seasonings. Let cook and heat taco shells in oven for a few minutes.
Peel avocado remove seed and put in a bowl; Add seasoned salt and pepper and mash until you have your desired consistency; Remove shells from oven start layering with chickpeas, onions, tomatoes, and top with avocado mash. Enjoy! I know I did.
