Meatless Dish- Black Bean Enchiladas


Mmmmmmmm!!!!! That's all I have to say. 

INGREDIENTS:
-Olive Oil
-Black Beans
-Tomatoes
-Onions
-Jalapeños
-Garlic
-Cumin
-Seasoned Salt
-Ground Black Pepper
-Enchilada Sauce 
-Mixed Cheese
-Greek Yogurt
-Scallions
-Soft Tortillas 



Preheat oven 350 degrees; lightly spray baking pan and set aside; heat olive oil in skillet over medium heat; add onion and garlic cook for about 5 minutes; add beans, tomatoes, and jalapeños, cook and add cumin, seasoned salt, and black pepper; lower the heat and let cook for about 5 minutes. 

Gather tortillas and start filling in the center and roll to the far end of the baking pan; repeat until you run out of space; spoon enchilada sauce over tortillas and go crazy with the cheese; cover with 'luminum foil *yes, I said 'luminum :)* and bake for 15-20 minutes; top with greek yogurt and scallions.
