Cod Fish Chowder



I had plan on doing a totally different recipe but when I saw a recipe on the back of the label, I knew I had to give it a try. Of course I tweaked it to my liking and I really liked how it turned out. I will be making this more often.

INGREDIENTS:
-Cod Pieces
-Olive Oil
-Smart Balance Butter
-Onions (chopped)
-Garlic (chopped)
-Potatoes (peel and dice)
-Whole Wheat Flour
-Milk
-Vegetable Broth
-Vegetable Bouillon
-Cumin
-Chili Flakes
-Seasoned Salt
-Ground Black Pepper
-Scallions (optional)

 Melt butter and olive oil; add onion and garlic and sauté; add potatoes and cook until they soften; add seasonings along the way (vegetable bouillon, cumin, chili flakes, seasoned salt, black pepper); add flour and gently stir; add milk and vegetable broth let cook until soup thickens; add cod pieces and cook until cod is completely cooked. Garnish with scallions.
