I'm always on the lookout for new recipes and it's even better if I end up liking it. This one truly didn't disappoint and I will be making it as part of Meatless Monday. I found this on Fifi's website Divine Hostess . She has a few recipes using mason jars. I thought that was the coolest thing.
I went out and bought some jars and decided to make the quinoa salad. I've seen a few recipes involving quinoa but I was skeptical. After drooling over the ingredients I knew I had to give it a try. Kale, I hope you can forgive me but this was really, really delicious.
-1 Tbsp Olive Oil
-Juice of 1 lime
-Cooked Quinoa (mines had chickpeas in it)
-Cooked Black Beans
-Red Wine Vinegar
-2 Tbsp Salsa
First make dressing: Whisk olive oil, lime, paprika, red wine vinegar, and salt together in a bowl. Add the dressing to jar first.
Now you can start layering starting with bell peppers, black beans, quinoa, cilantro, salsa, and avocado. Turn jar upside down and let the dressing do what it do and enjoy.
