Asian Barbecue Ribs

I'm getting bored with grilled/baked chicken recipes. So, I've been dusting off a few of my cookbooks stumbling upon recipes that had me drooling.

-Salt and pepper
-1/4 cup brown sugar
-2 tablespoon teriyaki sauce
-1 tablespoon hoisin sauce
-2 scallions 
-1 tablespoon ginger (grated)
-1 teaspoon star anise
-1 jalapeños 
-4 garlic cloves (chopped)

-1/4 cup sweet chile
-1/4 cup hoisin sauce
-2 tablespoon teriyaki sauce
-2 tablespoon honey
-1 tablespoon ginger
-1 tablespoon red wine vinegar*
-1 teaspoon sesame oil
-2 garlic cloves (chopped)
*the recipe called for rice vinegar but I didn't have so I used red wine instead

 The Marinade

Mix the brown sugar, scallion, star anise, teriyaki sauce, garlic, hoisin sauce, ginger, and jalapeños in a bowl to make a paste. Clean the ribs with lime then season with salt and pepper. Place in a pan and spread the paste over the ribs. Cover and refrigerate overnight. 

Bake at 350 degrees for about 2 hours. When almost done start making the BBQ sauce. In a sauce pan over medium heat add ingredients above for BBQ sauce. Let it cool. 

Discard the juices from the pan. Add the BBQ sauce to the ribs and bake for about 30 minutes until the ribs are glazed. Garnish with scallions (optional)

-1 Can corn
-1 Fresh Tomato
-1 jalapeño
-2 garlic cloves (crushed) 

Heat skillet over medium heat. Add olive oil, seasoned salt, and garlic. Then add tomato, jalapeños, and corn. Let cook about 5 minutes and enjoy.
