Meatless Dish: Mushrooms On Herbed Muffins

I bought a vegetarian cookbook that has a ton of recipes I can't wait to try. This is one of many featured in the book. I don't always follow the exact recipe because some of the ingredients I don't always have on hand. I work with what I have. Sometimes the results are good and sometimes not but the good outweighs the bad. 

So how did this one go? 

-1 Garlic Clove (crushed)
-Chive Whipped Cream Spread
-Red Wine Vinegar
-Olive Oil
-Smart Balance Buttery Spread
-English Muffins
-Seasoned Salt

Heat pan on medium add a tablespoon olive oil; add mushrooms and cook for about 5 minutes; remove mushrooms from pan; add olive oil, butter, seasonings, red wine vinegar, parsley, and garlic to the pan; return mushrooms to the pan again and cook. While they are cooking toast the muffins and add chive spread; top with mushrooms and garnish with parsley.

This gets two clueless thumbs up!
