Conch & Shrimp Pesto With Plantains



I was impressed with my Legume that I went back to the Farmer's Market to purchase more conch. I prepared/seasoned it the same way but this time I added pesto (without arugula) and without all the veggies. Shrimp was also added towards the end. While the conch was cooking I boiled the plantains adding some salt to the pot.

INGREDIENTS
-Conch
-Shrimp
-Onions
-Bell Peppers
-Tomatoes
-Plantians





Plantains look like bananas but shouldn't be eaten like one. They're also available year round. Here are a few health benefits of them 

-Have more potassium and Vitamin A than a banana
-Loaded with fiber which helps with constipation
-Good source of calcium for strong bones and teeth
