Meatless Dish: Creamy Lentil Vegetable Soup

-Purple Onions
-Fresh Minced Garlic
-Tomatoes or jar of salsa
-Mushrooms (optional)
-Olive Oil
-Seasoned Salt and Pepper

Can't forget the main ingredient

Boil potatoes once done put aside; Wash lentils and mushrooms and set aside; Heat olive oil on medium heat add garlic, onions, carrots, and celery; Cook until veggies are soft; Adding seasonings along the way; Add water or veggie broth.

I added this instead of tomatoes which I didn't have on hand

Let soup cook for a few minutes; puree some in the blender; return to pot for a more creamier soup. Add mushrooms (I just like adding it towards the end) and cook a few minutes more and enjoy!
