No Meat Challenge- Week 1

Black Bean Soup garnished with scallion and mixed cheese

Week one of my challenge is going good so far. I've had black bean and roasted vegetable soup. It's soup season so I've been looking up recipes on that. I also made a treat. Check out the recipes below!

Roasted Vegetable Soup

 Red Purple Onions, Celery, Carrots, Potatoes, Scallions, and Garlic

-Preheat the oven 350
-Put veggies in a baking dish 
-Drizzle with olive oil and seasoned salt
-Let cook for 30-45 minutes or until carrots and potatoes are soft

In the meantime..... 

Bring broth to a boil in large pot and add kale

Once veggies are done cooking add to pot and bring to a boil. Reduce heat cook for about 15-20. Then puree in batches in a blender. Return to pot, keep warm until ready to serve. I also added dumplings to my soup but that's optional.

Dairy Free Fudgesicle

I was reading Better Nutrition and came across a recipe using ingredients I would have never ever thought about using together. But my curious self gave it a try.

 Haas Avocados

1 cup Coconut Milk

3 Tbs Cocoa

The recipe called for agave nectar but all I had was honey so I used that instead.  

-Cut avocado in half,  remove the pit, scoop in blender
-Add coconut milk, honey, and cocoa
-Puree until smooth
-Add more honey if needed; then transfer to.....

Ice tray and....

insert sticks, freeze 4-6 hours or overnight

The only thing I didn't like, it was way too chocolatey for me. Next time I'll just add two tablespoon of cocoa and try it with agave nectar.
