Meatless Dish: Grilled Eggplant Hummus

-lemon juice
-olive oil
-seasoned salt
-salt and pepper
*ingredients can be modified to your liking*

Grill the eggplants, spray both sides with olive oil, top with salt and pepper

Hummus with added ingredients in blender waiting to be mixed

I normally would have made the hummus from scratch but I got lazy, I bought it plain and was browsing an article when I saw a mediterranean dip that called for ingredients I didn't have on hand. But I did have the hummus and decided to try it with that.  

Once the eggplant cooled down (and some went to my tummy), I cut it into pieces so that I can have a bit of chunkiness, thickness, and swolness going on with the hummus. It's the perfect snack with pretzels, pita/whole wheat bread, etc.....
