Teriyaki Shrimp and Rice

This wasn't too bad. The only thing I didn't like that much was the rice. It wasn't cooked all the way. If I make it again I'll cook the rice on stovetop. I got the idea from reading a newsletter from my local grocery store. But, they have no link for the recipe. It involves cooking with aluminum foil.


3 tablespoons pineapple juice (or orange juice)

1 teaspoon sesame oil

2 green onions cut in slices
multi-colored sweet peppers
1 teaspoon grated fresh ginger
*Not pictured is the teriyaki sauce, I forgot*
* you can choose how much or less you want*

I combined all of the above ingredients in a bowl and added the shrimp. Toss to coat.

Then I got aluminum foil and put pre-cooked whole grain rice in the center of the foil
then I can put the shrimp mixture on top

I balled it up to put in the oven instead of grilling. I let it cook for about 15 minutes.
The shrimp came out just the way I like and the peppers were crisp. Yay me!!!
When I was done eating I rinsed out the foil, balled it up to be reused to scrub pots and pans.
