Ingredients
Large flour tortillas(I used whole wheat)
2 sweet potatoes(optional)
1 can black beans
1 15oz tub ricotta cheese(plain yogurt can be used instead)
2 chopped tomatoes
1 chopped onion
2 cloves chopped garlic
1 bag shredded mozzarella
Roast cubed potatoes on a cookie sheet at 400 degrees for 40 minutes.
Cook onions and garlic in a pan with little olive oil until both are soft.
Mix in tomatoes, drained beans, and potato. Add salt and pepper to taste.
Next spray a square baking dish with oil, place a tortilla flat in the bottom and begin layering ingredients: ricotta, then the vegetables, then mozzarella, then repeat. Top layer should be mozzarella. bake at 350 degrees for 40 minutes or until top is browned.
I'll be trying this soon, it sounds delicious! I love black beans and tortillas and i just bought some sweet potatoes so I'm on my way. Substituting the ricotta for yogurt is interesting.

ReplyDeleteInstead of sour cream I add plain yogurt to my baked potatoes it might sound gross to some but the taste is the same
