Fried Egg Sandwich


1 12 oz ciabatta bread (or specialty bread of your choice)
4 slices Provolone cheese
2 tablespoon olive oil
4 eggs
1 tablespoon red wine vinegar or cider vinegar
1 tablespoon olive oil
1/2 teaspoon salt
1/8 teaspoon ground black pepper
1/2 medium cucumber, thinly sliced and halved
1/4 cup chopped red or orange sweet pepper
2 tablespoons chopped green onion
2 tablespoons snipped fresh basil
1/2 cup mixed spring salad greens (optional)

-Preheat oven to 350 F
-Cut four slices crosswise lightly toasted place bread on a baking sheet and top with cheese set aside
-In a skillet heat olive oil over medium heat break eggs into skillet reduce heat to low
-Cook 3 to 4 minutes or until whites are set and yolk start to thicken
-Turn eggs over and cook 30 seconds more
-Remove eggs from pan and put one egg atop each of the four cheese toppes bread slices
-Bake in oven 2 to 3 minutes or until cheese melted
-In a bowl combine the red wine vinegar, olive oil, salt, and pepper
-Add sweet pepper and cucumber to dressing mixture
-Top egg sandwiches with cucumber and sweet pepper mix
-Sprinkle with green onion and basil

And enjoy this dish was DA BOMB!!!
