Meatless Dish: Good Luck Salad










This was my first dish for the new year. I thought I wasn't going to like it  as usual I was wrong again. Words can't explain it. It didn't give me the why did I eat that feeling. One of the best salads ever. No more boring salads. Regardless of any luck I will continue making this often. What was my problem not eating veggies. The nerve of me.





Ingredients
Juice of 1 lime
2 cups baby spinach leaves, coarsely chopped
1 (15-oz) can black-eyed peas (drained and rinsed)
1 cup tomato trinity mix (fresh diced tomatoes, onions, bell peppers)
1/3 cup sweet pepper bruschetta topping
2 teaspoons green pepper sauce
1/4 teaspoon kosher salt
1/4 teaspoon pepper


Prep
  • Squeeze lime for juice (1 tablespoon).
  • Chop spinach.
Steps
  1. Combine all ingredients.
  2. May be chilled or served at room temperature.
