Cucumber Juice


Instead of eating cucumbers why not drink it. I meant to post this after my mango and avocado salad post. I almost forgot about it until I went to the farmers market. I saw cucumbers and realized I hadn't mention it. So I had to let you folks in on this recipe. I got it while watching food network with Sunny Anderson. Love her cooking but the Neelys are trouble in the kitchen. Those two have great chemistry they be cooking some mean dishes. I'm talking 'bout stuff that clogs the arteries I be mad droolin. They are out of control HAHA. Ok, sorry about that I went off track. This juice came out good was a bit messy with the straining. It's not something I would want to make everyday. I like to keep things simple. I'll probably do it on occasions. I didn't put ice, don't like how it waters down drinks. Now that's what I call a green drink.



  • 2 cucumbers (or however amount you want)
  • 3/4 cup sugar  
  • 2 cups water
  • Special equipment: cheesecloth


Peel the cucumbers, saving the peels. Grate cucumber flesh on a box grater. In a medium saucepan, bring sugar and water to a boil. When sugar dissolves, add the grated cucumber and simmer until cucumber  is tender, about 10 minutes. Remove from heat and let cool slightly.

In a blender, puree reserved cucumber peel and cucumber syrup until smooth. Line a strainer with cheese cloth over a bowl. Strain cucumber mixture. Gather cheesecloth in 1 hand to squeeze out all of the juice. Chill until cool, about 1 hour. Serve in glasses over ice.
