Im incorporating one meatless dish a week. Giving those fruits and veggies a chance to spice things up. So, I made some avocado eggrolls. Wasn't bad for my first time. Maybe if I had a deep fryer I would have gotten better results. I'll be posting more of these meatless dish as I see what sparks my interest.
- 1 medium onion, chopped
- 1 large red bell pepper, seeds and ribs removed and chopped
- 2 tb chopped fresh cilantro
- 6 tb dried currants ( I searched for this but couldn't find)
- 4 ripe avocados, peel and cut in large chunks
- 12 egg roll wrappers
- Spray some olive oil in a skilet and heat to medium. Add onion and bell pepper, and saute until tender.
- Remove the pan from heat let cool and stir in cilantro, currants, and avocados.
- Place 1 wrapper on a flat surface with a pointed edge towards you. Spoon a couple tablespoons filling in the center of wrapper, fold up and over filling,tuck underneath, roll the sides in towards the middle , and roll tightly to the opposite point. Moisten edges with water to seal.
- Spray skillet with olive oil again, fry rolls until crispy, and serve hot.
