Meatless Dish: Avocado Rolls

Im incorporating one meatless dish a week. Giving those fruits and veggies a chance to spice things up. So, I made some avocado eggrolls. Wasn't bad for my first time. Maybe if I had a deep fryer I would have gotten better results. I'll be posting more of these meatless dish as I see what sparks my interest.

  • 1 medium onion, chopped
  • 1 large red bell pepper, seeds and ribs removed and chopped
  • 2 tb chopped fresh cilantro
  • 6 tb dried currants ( I searched for this but couldn't find)
  • 4 ripe avocados, peel and cut in large chunks
  • 12 egg roll wrappers
  1. Spray some olive oil in a skilet and heat to medium. Add onion and bell pepper, and saute until tender.
  2. Remove the pan from heat let cool and stir in cilantro, currants, and avocados.
  3. Place 1 wrapper on a flat surface with a pointed edge towards you. Spoon a couple tablespoons filling in the center of wrapper, fold up and over filling,tuck underneath, roll the sides in towards the middle , and roll tightly to the opposite point. Moisten edges with water to seal.
  4. Spray skillet with olive oil again, fry rolls until crispy, and serve hot.
